This de Buyer frying pan is an ideal pan for preparing perfect dishes. The pan is made of sheet steel, which heats up quickly and can withstand high temperatures. de Buyer pans contain a high carbon content. This allows the pans to last a lifetime, provided you take good care of them. Like all de Buyer pans, the pan must first be seasoned. Before you can use a de Buyer steel pan, you must first season it to create a non-stick layer. To season the pan, you need a type of oil, but olive oil does not work well, as it cannot withstand high temperatures. Place the pan on the stove and heat it on low heat. Pour a generous amount of oil into the pan and let it boil for 5 minutes. Do not be alarmed by the smoke.

Before using a de Buyer steel pan, you must first 'season' it to create a non-stick layer. To burn in the pan, place the pan over medium/high heat, without oil first. Pour a good layer of oil into the pan. Use an oil that can handle high temperatures. Olive oil, for example, is not well suited for this purpose. Let it boil for 5 minutes. Don't be alarmed by the smoke, this is normal. After 5 minutes you can pour off the oil and dry the pan with kitchen paper. You can now use the pan normally! As you use the pan, it will become blacker and better protected against burning. Never wash the pan with washing-up liquid after use - hot water is sufficient to get the pan clean. In this way, the pan remains slightly greasy and the non-stick coating remains intact.
